Pat's (Abi's) Soft Ginger Cookies with Dried Cherries

Ingredients:

1 cup vegetable shortening/margarine

1 cup molasses

4 teaspoons baking soda

5 cups all-purpose flour

1 teaspoon salt

1 cup sugar

1 cup buttermilk

1 ½ teaspoon ground, dried ginger

1 teaspoon cinnamon

½ teaspoon ground cloves

1 cup Cherry Stop Dried Tart Cherries or Dried Balatons 

Instructions:

  1. Cream vegetable shortening/margarine & molasses.
  2. Mix dry ingredients in large bowl.
  3. Add dry ingredients to shortening-molasses mixture.
  4. Mix in buttermilk.
  5. Add cherries.
  6. Drop by heaping spoonful onto ungreased cookie sheet.
  7. Bake at 375 for 10 minutes or until done.

Makes about 5 dozen.

These ginger cookies were contributed by one of the Cherry Stop's first and "star" employees, Pat, many years ago. Pat's mother-in-law, Abi, who baked these cookies in a Pennsylvania lumber camp during the early 1900's, handed it down to her, and she added the cherries. Enjoy!
