Helen’s Famous Bread Pudding

Ingredients

6 C. Bread, brown & white

3 large eggs

2 ¾ c. milk or cream, or half of each

¾ c. sugar

1 c. The Cherry Stop Dried Montmorency or Balaton Cherries 

2/3 c. dried sweetened coconut

½ t. cinnamon

1/2  c. The Cherry Stop Cherry Peach Jam

Instructions 

  1. Soak dried fruit mix in warm water for 30-45 minutes to plump.  
  2. Break bread into bite-size pieces & put on cookie sheet to dry out.  
  3. Beat eggs slightly with sugar & cinnamon.  
  4. Add milk & stir.  
  5. Add bread to milk mixture & stir until all the bread is evenly moistened.  
  6. Add fruit and coconut; stir until mixed.  
  7. Put half the mixture in large, greased casserole dish, 8x8 or 9x9. 
  8. Spread jam evenly over mixture.  
  9. Add remaining bread mixture.  
  10. Bake at 350 for 40 minutes or until a knife comes out clean.  

Helen was Bob's mom; everyone loved this dish, especially at holiday time! (Bob and Gail were the original owners and founders of The Cherry Stop.)

Try a variation by substituting Cherry Blueberry or Cherry Raspberry Jam!
